In the Kitchen: Nutrient-dense skillet apple crumble

FIND A LINK TO THE WEBSITE ON OUR MAIN PAGE OF rhodeshow.com. Will: HERE WE ARE IN THE RHODE SHOW KITCHEN. HEALTH COACH ANDREA IS HERE. WE HAVE A SKILL LET APPLE CRUMBABLE WHAT WE’LL PUT TOGETHER. DON’T JUDGE. DON’T THINK I’M GOING TO HAVE SOMETHING THAT IS NUTRIENT DENSE AND NOT GOING TO TASTE GOOD BECAUSE I CAN ASSURE YOU WHEN ANDREA MAKES STUFF, IT IS HEALTHY FOR YOU. BUT IT ALSO TASTES GREAT. IT SHOULD. THAT’S THE GOAL! [LAUGHTER] Will: THAT IS A REAL COMPLIMENT. HERE’S THE THING. GOOD FOOD TASTES GOOD. Will: IT DOES. IF YOU HAVE TO ADD A TON OF SUGAR AND STUFF, THAT MEANS THAT YOUR INGREDIENTS AREN’T THAT GOOD AND IT IS NOT THAT GOOD FOR YOU. SO, WHEN YOU USE REALLY GOOD, QUALITY INGREDIENTS, THE FOOD TASTES GREAT. Will: YOU HAVE A BUNCH OF INGREDIENTS. IT IS A SIMPLE DISH TO PUT TOGETHER. LET’S GO OVER WHAT YOU HAVE. YEAH. THE BASE OF IT IS APPLES. AND YOU WANT A CRISPY APPLE. I CHOSE HONEY CRISPS FOR THIS RECIPE. THIS IS A GLUTEN-FREE, SUGAR-FREE APPLE CRUMBLE. WHAT I’M USING HERE IS KASABA FLOUR FROM THE YUCCA PLANT. AND IT HAS A LOT OF MINERALS IN IT AND MUCH MORE FLAVORFUL AND NUTRIENT DENSE. IF YOU DON’T WANT TO ORDER IT ON AMAZON, YOU CAN GO TO YOUR LOCAL GROCERY STORE AND GET A BROWN RICE FLOUR OR AN ALMOND FLOUR. AND WE’LL USE COCONUT SUGAR INSTEAD OF REAL SUGAR. COCONUT SUGAR TASTE LIKE BROWN SUGAR SO IN AN APPLE CRUMBLE IT IS PERFECT AND IT IS LOW GLYCEMIC SO IT DOESN’T SPIKE YOUR BLOOD SUGAR AND MAKE YOU HAVE THOSE CRAZY SUGAR CRAVINGS. AND THEN A TON OF SPICES. WE HAVE VANILLA. NUTMEG. ALLSPICE. GROUND CLOVES, CINNAMON, GINGER. BASICALLY ALL THOSE PUMPKIN PIE SPICES MAKE IT FEEL LIKE FALL. Will: LIT SMELL LIKE FALL OR TASTE LIKE FALL AND WRAP IT UP NOW. WE NEED TO COME BACK AND TALK ABOUT THE SKILLET THAT WE’RE Brendan: WE’LL BE RIGHT BACK. Michaela: WE ARE BACK IN THE KITCHEN WITH HEALTH COACH ANDREA. IF YOU’RE LIKE ME, YOU LOVE ANYTHING APPLES. APPLE PIE, APPLE CRISP, JUST PLAIN APPLE. BUT WE’RE MAKING A CRUMBLE. I LOVE CRUMBLE FOR THANKSGIVING. I LOVE THAT IT FEELS TO ME VERY FALL-LIKE. SO I’LL SHOW YOU HOW TO MAKE THE CRUMBLE PART OF THE CRUMBLE. IT’S REALLY EASY. THE THING I LOVE ABOUT THIS RECIPE IS IT REALLY DOESN’T TAKE MUCH TIME. YOU TAKE YOUR FLOUR. YOU CAN SUB OUT ANY KIND OF GLUTEN-FREE FLOUR. AND THEN I HAVE A COCONUT SUGAR. Michaela: I’VE USED COCONUT SUGAR BEFORE. YES. IT’S DELICIOUS. AND I REALLY DOES TASTE EXACTLY LIKE BROWN SUGAR. FOR A FALL RECIPE, IT IS PERFECT. AND IN HERE, I HAVE A MIX OF SPICES. THIS IS CINNAMON, NUTMEG, ALLSPICE AND CLOVES. Michaela: SO, FALL IN A JAR. [LAUGHTER] IT’S REALLY LIKE A PUMPKIN PIE MIXTURE AND THEN YOU THROW IN A LARGE CHUNK OF GRASS-FED BUTTER. AND THEN ALL YOU HAVE TO DO IS MIX IT UP. IT GETS A LITTLE SALTY. MIX IT UP AND THEN YOU HAVE THIS WONDERFUL DOUGH THAT SITS IN THE BOWL FOR 20 MINUTES WHILE YOU MIX UP YOUR APPLES. PUT THEM IN THE PAN. Michaela: AND LET’S TALK ABOUT THE PAN. WHENEVER YOU USE A SKILLET, I THINK IT JUST — IT TAKES ON A WHOLE NEW MEANING, A WHOLE NEW FLAVOR, IF YOU WILL. WHENEVER YOU MAKE SOMETHING IN A PAN VERSUS IN A SKILLET. THAT IS WHY I’M MAKING MY APPLE CRUMBLE IN A SKILLET. WHEN YOU COOK IT IN A SKILLET, IT HAS THE SEASONING ALREADY IN THERE SO IT REALLY INFUSES A CRISPINESS TO THAT APPLE CRISP. WHICH, YOU KNOW, WE REALLY LIKE. SO A SKILLET LIKE THIS IS GOING TO REALLY, YOU KNOW, GET THOSE APPLES INTO THAT PERFECT, MUSHY WHERE THE CRUMBLE IS NICE AND CRISPY ON TOP. SO THIS PAN I GOT AT STUCK ON HOPE STREET. IT’S SUCH A COOL STORE. Michaela: AND IT IS GOING TO WE’LL BE RIGHT BACK. Will: WE HAVE SKILLET APPLE CRUMBLE ON THE SHOW TODAY. IT’S GOOD FOR YOU, RIGHT? IT IS GOOD FOR YOU. Will: ALL THE STUFF IN HERE IS HEALTHY INGREDIENTS SO YOU CAN GO CRAZY. ABSOLUTELY. WE HAVE ALL OF OUR APPLES CHOPPED UP. THIS IS ABOUT FOUR TO FIVE CUPS OF APPLES DEPENDING ON HOW BIG YOUR SKILLET IS. I LIKE A NINE-INCH PAN. WHAT WE’RE GOING TO DO IS THROW IN, IF YOU WOULDN’T MIND A TEASPOON OF FLOUR OR A TABLESPOON. TWO TABLE SPOONS OF COCONUT SUGAR, WHICH WENT INTO A LOT OF THE INGREDIENTS ARE THE SAME. BUT DIFFERENT IS THE SPICE MIX THAT GOES INTO THE APPLES, THEN. THERE’S GINGER IN HERE. WHICH GIVES IT A LITTLE KICK. SO YOU ARE GOING TO THROW THAT IN. Michaela: BE CAREFUL WITH GINGER BECAUSE IT IS VERY POWERFUL. USING 1/8 OF A TEASPOON. IT IS A TINY AMOUNT BUT IT REALLY, REALLY MATTERS. IT BRINGS OUT THE FLAVOR. TOTALLY. SO WE’LL SQUEEZE A LITTLE BIT OF LEMON IN HERE. AND THEN WE’RE JUST GOING TO TAKE A DASH OF — IF I COULD GET IT OPEN. Will: EXTRACT. DO YOU WANT TO OPEN THAT FOR ME IN MY HANDS ARE ALL LEMONY. THERE’S SOME MAPLE SYRUP. WHEN I COOK, I’M NOT THAT EXACT. I LIKE TO JUST POUR. Michaela: I DON’T THINK MANY PEOPLE ARE. UNLESS IT’S BAKING AND YOU NEED TO BE VERY PARTICULAR. RIGHT. Will: ADDING A LITTLE OF THIS AND THAT, YOU’LL BE FINE. THIS IS IS A APPLE CRUMBLE THAT YOU CAN PUT ON YOUR THANKSGIVING TABLE. IF YOU GO TO MY WEBSITE, I HAVE A RECIPE FOR DOWN AND DIRTY APPLE CRUMBLE THAT YOU CAN MAKE IN 10 MINUTES IN YOUR OWN HOME SO WHEN YOU ARE SITTING AT HOME AND WATCHING TV AND JUST WANT THAT APPLE CRUMBLE FLAVOR, YOU CAN MAKE THAT WAY. IT DOESN’T HAVE TO BE FANCY LIKE THIS. SO WHAT YOU DO IS PUT THAT APPLE INTO THE PAN. Michaela: OK. WE’LL TAKE OUR DOUGH OUT OF THE FRIDGE. Michaela: GET IT ALL TO FIT IN THERE. IF IT DOESN’T, THAT’S OK. Michaela: OH, IT IS GOING TO. WE WANT A LOADED CRUMBLE. AND THEN YOU TAKE YOUR DOUGH THAT HAS BEEN RISING FOR ABOUT 15 MINCE AND THEN JUST CRUMBLE IT. JUST — YOU KNOW, IT IS GOING TO COOK RIGHT ON DOWN. YOU JUST WANT IT TO GET NICE AND FRESH. THE SPICES MAKE THIS DISH. Michaela: ABOUT HOW LONG WILL THIS BAKE FOR? ABOUT 45 MINUTES. IT IS EASY TO MAKE, BUT IT DOES TAKE TIME. SO, THIS IS YOUR APPLE CRUMBLE. STICK NIT HERE. AND THEN I HAVE ONE FOR YOU TO TAKE IN THAT BEAUTIFUL PAN. WHAT I DO NEED IS AN OVEN MITT. THANK YOU. THANK YOU SO MUCH. Will: YOU’RE WELCOME. Michaela: AND YOU NEED FRESH WHIPPED CREAM. I MADE FRESH WHIPPED CREAM AND THE WAY THAT THAT WORKS YOU PUT IT IN — I DO IT IN A FOOD PROCESSOR, ACTUALLY. AND THEN I DON’T ADD SUGAR. I ADD MAPLE SYRUP AND VANILLA AND THAT GIVES IT A VERY SWEET FLAVOR, AGAIN WITHOUT HAVING ACTUAL SUGAR. I WANT YOU GUYS TO HAVE A TASTE. Michaela: OH, YEAH. Will: WHILE YOU ARE CHOPPING THAT UP, TELL EVERYONE WHAT EXACTLY A HEALTH COACH IS. I TEACH PEOPLE HOW TO EAT IN A WAY THAT MAKES THEM FEEL FULL. GIVES THEM THE NUTRIENTS THAT THEIR BODIES NEED. AND HELPS THEM TO JUST GENERALLY FEEL BETTER. HAVE ENERGY THROUGHOUT THE DAY. NOT GET THAT 4:00 P.M. CRASH. Michaela: VERY IMPORTANT. YOU NEED MORE CREAM THAN THAT. Michaela: OK. HERE YOU GO, WILL. I TEACH — I’M A PERSONAL TRAINER AS WELL SO I LIKE PEOPLE TO LEARN HOW TO EAT AND MOVE IN A WAY THAT’S HEALTHY. SO I COME TO YOUR HOME AND I HELP YOU FIGURE OUT HOW TO DO THAT IN THE COMFORT OF YOUR OWN SPACE. Michaela: THAT IS EXCELLENT. DELICIOUS! AWESOME. Will: FOR ANYBODY WHO THINKS THERE WON’T BE ANY TASTE BECAUSE OF CERTAIN THINGS, THIS TASTES DELICIOUS. AND THE DOUGH THAT IS ON TOP OF IT IS AWESOME. YAY! Michaela: THE CRUMBLE AND THE WHIPPED CREAM, YOU ARE GOOD TO GO.
